This week on Beats & Eats, it's all about the music. Kicking off the show, you'll hear some old skool disco vibes followed by tracks off of Kardinal Official's latest album Firestarter: Volume 2
Later in the show, you'll hear some tracks from Sauti Sol. Last Friday, host Necole had the pleasure of hearing Fancy Fingers from Sauti Sol perform their biggest hits.
This was such an amazing performance! BIG shoutout to the production company Eminent entertainment, who helped bring this FREE event to life for the community.

This Friday October 2nd at SFU Burnaby Campus: The Black Student Centre presents BLACK STUDENT SUPPORT AND HEALING SPACE: DRUMMING WITH ABBY. From 2pm -3:30pm
Join Abby and connect through rhythm, movement, and music. This session offers an opportunity to explore drumming, experience the healing power of rhythm, and build community in a relaxed and supportive environment. No previous drumming experience is needed.
The session is taking place in the Black Student Centre Wellness Room (MBC 2294)

Today's Food Talk was about a delicious recipe that Necole stumbled on featuring her favourite thing to eat - fried overripe plantains.
Brown Butter Double Plantain Cookies by @jordammer on Tik Tok
INGREDIENTS
Caramelized Plantain Chunks
2 large ripe plantains
6 tbsp salted butter
COOKIE DOUGH
2 sticks (226g) salted butter
1½ cups (300g) granulated sugar
1½ cup (50g) light brown sugar
1 egg
1½ cup (80g) roasted plantain purée
1½ tsp (7g) vanilla, or measure with your heart :)
1 tbsp (15g) heavy cream
2 cups (240g) all-purpose flour
1/2 tsp (3g) baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
INSTRUCTIONS
1. Preheat the oven to 400°F. Leave one very ripe plantain whole and in its peel.
Make a long slit in the peel and place it on a lined baking sheet. Roast for 20-30 minutes, until the peel is black and the inside is extremely soft.
2. Scoop the flesh from the peel and blend until completely smooth. Do not add any liquid. Measure out 80g (about 1/3 cup) and allow it to cool completely.
3. Place 2 sticks of butter in a saucepan over medium heat and cook until browned.
Pour the butter and all the browned milk solids into a large mixing bowl.
4. Let the brown butter cool until room temperature.
5. Peel the 2 plantains and roughly dice.
6. Melt 6 tbsp of butter in a skillet/pan.
Once melted, add the diced plantain and cook on medium heat until golden and caramelized. Transfer to a plate and cool completely. Pat dry with a paper towel.

7. Add the granulated sugar and brown sugar to the brown butter. Mix well.
8. Mix in the egg, roasted plantain purée, vanilla, and heavy cream until thoroughly combined.
9. In a separate bowl, whisk together the flour, baking soda, cinnamon, and nutmeg.
10. Add the dry ingredients to the wet ingredients and mix just until no visible dry flour remains. Do not overmix.
11. Gently fold the completely cooled caramelized plantain pieces into the dough.
12. Portion the cookies into 9 large cookies using ? cup of dough per cookie.
13. Freeze the portioned cookie dough overnight before baking.
14. Bake at 330°F for 28-30 minutes. Let cool completely.
15. Enjoy!
